📊 The evidence behind this guide. Nothing here is ranked on one visit. The lampredotto and schiacciata counts come from the 80 English and Italian list pages read for where to eat in Florence: Devour Tours, Firenze Made in Tuscany, Cookist, Gambero Rosso, La Cucina Italiana, Foodzilla, Il Giornale del Cibo and others. Counts are publishers, with the English and Italian figures shown apart. How the guides are made
⚠️ The stands close in the afternoon. The Mercato di Sant’Ambrogio is open Monday to Saturday 7:00 to 14:00 and shut on Sunday, and its stands go with it.
Lampredotto
Lampredotto is the abomasum, the fourth stomach of the cow, sold by the trippai, the tripe vendors. Cookist says it is served in a roll, a semelle, dipped in the broth it was cooked in, with the chopped meat cut to order, and that the sauce is either green (parsley, capers and anchovies) or hot with chilli. Cookist puts the price of a sandwich at about €4 and Devour Tours at €5 to €6 (Cookist, Devour Tours).
