Schnitzel, Tafelspitz and the old houses

A Wiener Schnitzel is veal. The Austrian Food Code defines it as a veal cutlet breaded in flour, egg and breadcrumbs and fried in fat, and sells a pork cutlet as Schnitzel Wiener Art (Austrian Food Code). In Falstaff’s readers’ vote for 2026, which counted veal only, the Vienna winner was Plachuttas Gasthaus zur Oper, and Meissl & Schadn was praised for breading the cutlet in front of guests (oe24.at).

Würstelstand

At a sausage stand the question is süß oder scharf?, sweet or hot, and it asks about the mustard, not the sausage. The Käsekrainer is a lightly smoked pork sausage with 10 to 20% cheese. The Tourist Board names the Bitzinger stands at Albertinaplatz and by the Riesenrad, and a late-night stand on the Hoher Markt (Vienna Tourist Board). Vienna food tours has a guided sausage-stand tour from €69.

Common questions

How many Michelin-starred restaurants does Vienna have?

Michelin's Vienna and surroundings list shows 17: two with three stars (Steirereck im Stadtpark and Amador), four with two (Mraz & Sohn, Konstantin Filippou, Silvio Nickol and Doubek) and eleven with one. It also lists 12 Bib Gourmand restaurants, eight of them in Vienna, and 49 Selected.

Do I need to book a restaurant in Vienna?

For the starred tables, yes: Silvio Nickol takes advance reservations Tuesday to Saturday, Amador opens for dinner Wednesday to Saturday, and Doubek takes bookings three months ahead with a €100 deposit per person. Figlmüller takes bookings by phone, the Glacis Beisl asks for a phone call on Saturdays, Sundays and holidays, and the bar at Zum Schwarzen Kameel needs none.

Is a Wiener Schnitzel always veal?

Yes. The Austrian Food Code defines a Wiener Schnitzel as a veal cutlet breaded in flour, egg and breadcrumbs and fried in fat; a pork cutlet is sold as Schnitzel Wiener Art. Figlmüller's signature schnitzel is pork, 30 cm across, and it also lists an Original Wiener veal schnitzel.

When is the Schweizerhaus open?

From 15 March to 31 October, daily 11:00 to 23:00, with the kitchen open to 22:15 and no closing day. It is closed from 1 November until the following March.

Is the Naschmarkt open on Sundays?

The stalls are not, except on a few named Sundays: the city allows them to open from 9:00 to 19:00 on Valentine's Day, Mother's Day and All Saints. The market's restaurants and bars may open from 09:00 to 21:00 on Sundays and holidays.

What does süß oder scharf mean at a sausage stand?

Sweet or hot. It is the question about the mustard at a Würstelstand: the Tourist Board says the sausage is a separate choice.
