- No bookings: Da Enzo al 29 and Pizzeria Da Remo. Arrive before they open, at least 30 minutes before at Da Enzo. The counters (Pizzarium, Antico Forno Roscioli, Supplizio, I Supplì, Trapizzino) have no tables to book. At Pizzarium the queue is shorter after the lunch rush, around 16:00.

The Roman classics
Four pastas carry Roman cooking, and every place below is named for at least one. Carbonara is guanciale (cured pork cheek), egg, pecorino romano and black pepper, with no cream. Cacio e pepe is pecorino and pepper, which takes skill to turn into a smooth sauce. Amatriciana adds tomato to guanciale and pecorino, and gricia is the same without the tomato. Alongside them is carciofi alla giudia, a whole artichoke fried flat, from the Jewish Ghetto. The entries run in order of how many sources name each place.

The most-named place in this guide. Gambero Rosso made it its champion of tradition for cacio e pepe in the 2025 edition of its Rome and Lazio guide, and Passione Gourmet ranks the dish second of five (January 2026). Order the cacio e pepe, the carbonara, fried meatballs or Roman artichokes. The restaurant is built into the slope of Monte Testaccio, the hill of ancient amphora shards, and seats more than 200 inside and 110 outside, with a largely local crowd. Gambero Rosso’s champion of tradition for carbonara in its 2025 Rome and Lazio guide, and one of three Rome trattorias given Tre Gamberi that year. Order the carbonara, the cacio e pepe made with tonnarelli (thick spaghetti), tripe or carciofi, and finish with a maritozzo, a bun split and filled with cream. It has indoor and outdoor tables and a tasting menu of Roman dishes, in a district where many restaurants are aimed at tourists. Plan around the closed Wednesday lunch.

A deli whose back room is a restaurant, with tables of different sizes among the bottles and a cellar of more than 2,800 labels. Order the carbonara: Passione Gourmet ranks it first of five in Rome (July 2025), and Gambero Rosso gave the place Tre Bottiglie in its 2025 guide. Book online and pick one of the slots (12:30, 12:45, 14:30 or 14:45 for lunch; 19:00, 21:30 or 21:45 for dinner). A card is needed to book, and a no-show costs €20 a person if you do not cancel by email. If it is full, Rimessa Roscioli at Via del Conservatorio 58 is a five-minute walk.
Da Enzo al 29

A tiny trattoria with chequered tablecloths, walls lined with wine bottles and a handful of outdoor tables. Order the carbonara, the meatballs and the braised or fried artichokes; the bread is naturally leavened and the ingredients come from the family’s own farm. Time Out puts a meal at €30 to €50 a head without drinks. It takes no reservations, so arrive at least 30 minutes before it opens or expect a wait.

It shuts for about a month in late summer (9 August to 7 September in 2026).

Passione Gourmet ranks the carbonara third of five, and Gambero Rosso gave the place Tre Tavole in 2025.

Gabriele Bonci’s pizza in teglia, sheet-pan pizza with seasonal toppings. It came second in Italy in 50 Top Pizza’s 2025 ranking of pizza al taglio. Order whatever is on the tray; Katie Parla’s favourite is the pizza bianca and mortadella sandwich, which Pizzarium serves some days. The queue can run long and is shorter after the lunch rush, around 16:00. It is a few minutes from the Vatican Museums (see the Vatican Museums tickets guide). Bonci’s other shop, Panificio Bonci at Via Trionfale 36, is a bakery that also sells pizza.
Antico Forno Roscioli
